I would not think that training in any sort of period accurate armour/garment would at all hinder technique. I have done a little bit of training wearing a fellow member's hauberk, and the added weight definately changed the feel. Also I have heard of certain helmets that limit the over-the-head Von Dach position and force one to take the over-the-strong-shoulder Von Dach instead.
But, I would not view this as a hinderance, for these armours were worn in combat, and any slight change in technique that they imposed, be it added weight/heat or small limitations in movement, had to be familiarized and effectively worked around.
Blossfechten is well and good, very many men fought unarmoured, but I definately look forward to the opportunity to train in accurate armours.
