Information on horseback/cavalry combat

Hello everyone! I'm an avid martial art enthusiast, particularly western martial arts, which I had always believed had always been the base of all forms of martial arts and had always battle-effective if they weren't forsaken over time and technology.

Right now, I'm looking for more information regarding historical horseback combat and cavalry. All I know is to never trust any Hollywood or movie depiction of any sorts of ancient combat, as they usually do not portray them accurately. I also know that mounted soldiers have the advantage of height, speed and power, as well as the ability to engage and disengage, although I believe there's more to it:
How do they engage in combat against unmounted foes?
How do foot soldiers fight to counter cavalry?
How do they fight against another mounted foe?
How do they train?

Anyone here trained on horseback? Are there any old texts or recent articles on horseback combat throughout the ages?

i know talhoffer among others has a detailed section on horseback fighting mainly against other mounted opponents.
what period exactly are you interested in as tactics etc did change quite a bit while much of the fighting stayed the same ie the lance still being used by German cavalry in the first world war and by the polish in the second.
mounted combat remained pretty popular im sure if you will find lots if you know a time frame of interest/region it might help to others to give more detailed answers.

No preferred era or period, as any information on horseback combat would do.

@John Trojanowski: Quite interesting indeed! There are other related videos that shows stunt demonstrations of fencing on horseback during the early 1900s.

I do feel that attempting to truly recreate historical horse combat can be dangerous, especially considering that the momentum and power of the initial horse charge as well as the horse's hooves can trample.
