For individual combat, besides DiGrassi and Capo Ferro, there is a fair bit in Marozzo and Manciolino, and a little in Agrippa. Page is 18th century but his broadsword and targe stuff is similar to the earlier material.
Capo Ferro has a bit but thats rapier and target and thus not for battle troops.
I don't know about that; the techniques he gives look like pretty standard sword and target work to me.
For military drill you could try Adam van Breen's "De Nassausche wapen-handelinge van schilt, spies, rappier ende targe" (1618), which was translated into English in 1625 as "Mars His Field". I don't know if it's what your looking for, but there is shield drill.
