I haven't looked through it at all, but it may give you some ideas of where and how to look further. It's apparently run by the Department of History at Southern Connecticut University. Hope this helps.

Considering the Ottoman tendency to obsessively catalog and chronicle everything Turkey would be the richest source for training manuals. If only I had the time and money to study Medieval Turkish and travel over there on a Library Raid.

I have seen an illustration somewhere of an Arab soldier practicing sword cuts into a lump of clay on a table. I can't recall the source, however. I will try and dig it up
